People overseas usually describe Mauritius as a rainbow nation due to its multi-ethnic population. This cultural diversity is also represented in the local cuisine, especially in the Mauritian “curry”. Here is the recipe of the GENUINE Mauritian curry by our Chef for you to try.
- 150g boneless chicken
- 100g shrimp size 31/40
- 10g turmeric powder
- 15g curry powder
- 20g fresh coriander
- 1g black pepper
- 0,5g ground nutmeg
- 3g ginger and garlic paste
- 10g onions, chopped
- 5ml oil
- 2g curry leaves
- 2g thyme
- 20g fresh tomatoes
Cut the chicken into pieces and leave it to marinate with the turmeric powder, ginger and garlic paste, salt and pepper in the fridge.
In a saucepan, add some oil, chopped onions and the remaining ingredients, except tomatoes, and simmer until brown.
Add the chicken and stir. Add some water or chicken stock and season to taste.
When the chicken is almost done, add the shrimp and tomatoes to the curry.
Once all is cooked, add fresh coriander and serve hot with white rice or faratas (Indian flat wheat bread).
